Blackberry Mint Muffins recipe

Ingredients:

1 ½ cup of fresh blackberries.
½ cup of mint, finely chopped.
1 cup of sunflower seeds.
2 cups of all-purpose flour.
1 tablespoon of baking powder.
¾ cup of brown sugar.
½ cup of buttermilk.
1/3 cup of vegetable oil.
1 medium egg.

Directions:

Preheat your oven to 400°F (205°C) and grease a muffin tin.

In a bowl, mix together the blackberries, mint and sunflower seeds.

In another bowl, mix together the flour, baking powder and brown sugar.

In a third bowl, mix together the buttermilk, vegetable oil and egg.

Pour the liquid mixture into the flour mixture and mix until just blended.

Fold the blackberry/mint mixture into the batter until just mixed.

Spoon into muffin cups and bake for about 20-25 minutes or until done.
